I've been a little obsessed with this breakfast on my weekends. Eggs, leftover taco meat from the week, spinach, and a spoonful of salsa. The Kroger Private Selection Restaurant Style has been my go to for a while, seems pretty clean.

Super simple lunch today - tuna salad made with 1 can tuna, 1/2 avocado, diced celery, s&p on a bed of spinach with cucumbers, radishes and flaxseed crackers (pic of crackers in comments).
Zucchini Boats - onions, mushrooms, peppers, zucchini, spinach, ground beef, and a little marinara sauce stuffed in zucchini. Delish!
This salad was sooooo filling! If you use cabbage and Brussels for salad you wouldn't believe how full you feel!
Super easy clean blueberry muffins
• 2 Cups Almond Flour
• 2 Eggs
• 2 Egg Whites, only
• 1/4 cup Unsweetened apple sauce
Ignore the fact that it's 80 degrees out... we had the roast chicken w/lemon and white beans last night. I adapted for the crock pot and accidentally added a little too much broth. My husband and I only had small portions of the beans and I'd thrown 2 cans in. Saved all the drippings, beans, and cleaned the carcas. Threw it in a pot with a bay leaf, celery, carrots, a little salt and pepper and had soup tonight that everyone ate! It was generally too oniony for me so I took a bunch of the slices out prior to souping and will add less next time. Tasty winter recipe that stretched 2 days 😆.
This salad was wonderful! I didn't add cheese bc I don't eat dairy. Did almonds bc I had them instead of hazelnuts. Added grilled chicken on top!
This was delicious! And very easy. I doubled the recipe and used 1 lb ground beef and 1 lb ground lamb. I used Aldi's organic marinara sauce and omitted the cheese. Reminded me of a stuffed cabbage roll without the hassle!
